(I'm on a black-eyed pea binge today)

Marinated Black-Eyed Peas

This recipe comes from the back label of a can of Bush's black-eyed peas:

1 can of Bush's black-eyed peas, rinsed & drained

1 rib celery, chopped

1 Tbsp onion, finely chopped

1 Tbsp vegetable oil

1 Tbsp vinegar

1 Tbsp mayonnaise

1/4 tsp salt

dash of cayenne pepper

1 ripe tomato, diced

Combine first 3 ingredients. Combine oil, vinegar, mayo, salt and pepper; mix well and pour over pea mixture. Stir gently and chill in refrigerator several hours. At serving time, add diced tomato and mix carefully.

I usually double this recipe.

I have to tell you, but shush, it's a secret: I'm getting Bush's canned black-eyes and just heating and serving. That's as good as it gets over here. LOL!

Only someone from the south would get the "black eyed pea" thing on New Years. I'm a transplant from TX, currently living in CA. No one, and I mean NO ONE eats black eyed peas out here. I'm amazed at how many have never even heard of them! So my family will be eating them alone today... Wish I had found your site a few days earlier so I could make these recipes. I'll just print them up for next year!

I never appreciated how very much I love peas until I started this no/low-carb diet! LOL! Four more weeks before re-introducing these lovelies!
